First impressions

What we do
A website and online presence that feels like walking through your door, with hours, menus and booking easy to find.
Why it matters
Most guests meet you online before they walk in. What they find should match the experience waiting at the door.

You get: a one-page site in your voice · about 2 weeks

The barfrom$1,200

Setting the bar

What we do
Beverage programs built for your concept, guests and margins: cocktail menus, tested and standardized recipes, costing, bar layout, purchasing and staff training.
Why it matters
A drink list has to work on a busy Friday and on the P&L. We pair creativity with commercial sense so the bar is distinctive and pays its way.

You get: 6-drink menu, spec sheets, costing · 2–3 weeks

The dining roomfrom$650

Reading the room

What we do
Service standards, pacing and atmosphere, from music and lighting to how guests are greeted, seated and sent home.
Why it matters
There’s no single formula for great service. A neighbourhood café shouldn’t run like a fine-dining room. We help you define it for your guests, then train a team to deliver it without a script.

You get: written service standards, atmosphere notes · about 2 weeks

The kitchen passfrom$750

Heart of the house

What we do
Menu development, design and engineering, plus the kitchen workflow, prep systems and recipe standards behind it.
Why it matters
The kitchen is where the concept becomes real. We help you find a menu that’s true to your identity, right for the people who live and dine nearby, and simple enough to run well.

You get: cost per plate, food-cost report, quick wins · 1–2 weeks

The back officefrom$950

Built to last

What we do
Practical systems for restaurants and bars: SOPs, scheduling, hiring and onboarding, clear roles, inventory, cost control and cash flow.
Why it matters
Hospitality needs passion and structure. Good systems tell staff what’s expected, give managers the tools to lead, and keep the room running when the owner isn’t in it.

You get: 7 SOPs, roles chart, expectations in writing · 3–4 weeks

Last callfrom$350/mo

Until tomorrow

What we do
Support after the first project: follow-ups, periodic reviews, menu and bar updates, help with staffing and training, and adjustments as you grow.
Why it matters
We don’t hand over a report and disappear. When something needs to change, from the bar to the schedule, you have a partner who already knows your business.

You get: monthly hours, on-site visits and reviews · month to month after 3

Family meal · Why we do this

One team, one dream.

In a kitchen, “one team, one dream” is what you say when the tickets are stacked and nobody’s going home early. It means we’re in this together.

It’s the phrase I’ve said every day for fifteen years, on the line and behind the bar. OTOD is named for it. It stands for the hours and effort everyone puts in to make a place work, from the dish pit to the owner’s office.

My dream is to see independent restaurants and bars succeed, and to see the people who keep them running succeed with them.

True to the room

We build on what makes your place yours. No trend-chasing, no copy-paste concepts.

Built for your neighbourhood

Menus, prices and service designed for the people who actually walk in.

Systems that serve people

Structure that lets your team do their best work instead of firefighting.

Numbers you can read

Costs and margins explained plainly, so you can decide with confidence.

We don’t disappear

Follow-up is part of the plan, not an upsell.

What we won’t do

  • Hand you an 80-page report and leave.
  • Sell you a concept that belongs to someone else’s room.
  • Push a website you don’t need.
  • Promise results we can’t measure.

Pre-shift · How we work

Six steps, no surprises.

  1. A free conversation

Thirty minutes by phone or over a coffee: your goals, your challenges, and whether we’re a fit. No obligation.

  2. A walkthrough during service

We visit on a real night and watch the room, the bar, the pass and the back office. $250, credited to your project.

  3. A fixed quote

A written scope, timeline and price before anything starts. No hourly meter running.

  4. Work alongside your team

We build with your staff, not around them, so the changes hold after we leave.

  5. Handoff and training

Every package ends with your team trained and the documents in their hands.

  6. We stay in your corner

A follow-up check-in after every project, and ongoing support if you want it.

From day one we agree on what we’ll track together: food and pour cost, labour, ticket times, average cheque and staff turnover. No promised numbers, just honest ones.

Alex, smiling behind a backlit bar

Who’s behind OTOD

Both sides of the pass.

I’m Alex, and I’ve spent more than fifteen years in hospitality. I started in kitchens: chef de partie at Langdon Hall, executive sous chef at Spirit Ridge, and chef roles at Burrowing Owl, Seasons Oakville and remote BC lodges, including running hospitality and the kitchen at Skeena Lodge.

Then I moved behind the bar to meet the guests I’d been cooking for. At Paradigm Spirits I helped scale recipes for production and retail bottling, including a 500-litre milk punch. I went on to manage the bars at Grace London and 132 Bar Vintage, running budgets, costs, staffing, training and liquor compliance.

In 2021 I started Shaken-Stirred, which grew into events, cocktail services and a resource hub for people in the industry. OTOD is the next step: putting both sides of the pass to work for owners who want to build something they’re proud of.
